"No meat or meat substitutes - great for winter days when fresh veggies are hard to find. Yummy vegetarian taco salad that even my 11 year old enjoys. Polenta corn chips have only 3.5g of fat per ounce - I use SOLEA polenta chips."

ingredients

  • 16 ounces kidney beans, rinsed and drained
  • 8 34 ounces corn, drained
  • 4 ounces green chilies
  • 2 -3 roma tomatoes, diced
  • 3 green onions, sliced
  • 1 tablespoon taco seasoning
  • 13 cup light sour cream
  • 4 -5 cups mixed greens, shredded
  • 5 ounces baked corn tortilla chips or 5 ounces polenta corn chips, broken

  • Stir first seven ingredients (through sour cream) together in a large bowl until combined.
  • Gently stir in mixed greens (greens will wilt if there are leftovers, so I usually just throw the greens on the serving plate!).
  • Layer chips on serving plates and top with taco mixture.
  • Serve with your favorite taco toppings if desired, olives, shredded cheese, taco sauce, etc.

  1. You don't need to be a vegetarian to love this colorful, crunchy salad. The beans make it "meaty." I thought this was super quick to make and super yummy to eat! Being lowfat and healthy is an added bonus. I like my cheese, so I sprinkled shredded cheddar on top. If I had cilantro, I would have garnished with that, too..... next time! Thanx!

  2. Wow! How come no one told me how yummy and easy taco salad is?! Breaking one of my own food rules I had never tried taco salad because it looks "funny". I'm glad I finally did though! We used black bean because kidney beans reminded us too much of chili. I forgot the green onions and used diced tomatoes, drained, instead of the romas. Wonderful dish that will be a oft-served one in the summer when it's too hot to cook!

  1. The only thing I did differently (besides the shredded cheese/cilantro toppings, which others have mentioned) was use rinsed black beans instead of kidney beans.

  2. Very Tasty! I added salsa, and used plain non-fat yogurt instead of sour cream! Without cheese, it does not lack flavor! The taco seasoning really adds to the salad!

  3. YUMMY! I made this with a 3-bean mix and subbed salsa for the tomatoes. I also added cilantro and light shredded cheddar. Very satisfying. Made for the Zaar Stars tag game.

  4. Wow, I thought this salad was terrific! Definitely worth making again. Instead of green chilies I added half a jalapeno (because I forgot to buy the chilies). I also added lime flavored corn tortillas (they were very tasty) and substituted 0% Greek yogurt for the light sour cream. The roma tomatoes at the store didn't look too hot so I substituted grape tomatoes cut in half. I added a bit of monterey jack cheese, kalamata olives and some salsa. Served on top of romaine and radicchio lettuces. Easy to make too! Thanks Brooke:D

I have tried so many recipes and many new foods that I never would have without Zaar. <br><br>I work full-time at a university in Wisconsin, it allows me to travel a bit and see the rest of the state, I work with a lot a great people and am really happy in my job. <br><br>When I'm not working, I spend time with my hubby and 12 year old son. My son has picked up my love for cooking, a few of the things he makes are - naan bread, cookies, and quick breads, I'm so proud of him! In our family we also have two co*cker spaniels, our puppy Laci (above) and Peanut, that we adore like they were our children. <br><br>We live in an old farm house that we are remodeling (did the library and the kitchen so far....) on the outskirts of town.
